Brigade News / Site Maintenance - Server Upgrade

The host has let me know that we're schedule for a OS upgrade today. It should have little to no impact on the site but there will likely be a window of 15-60 minutes of downtime while they do the actual upgrade.

Brigade News / Hosting Issue

Long story short, our host was experiencing serious storage issues, my server corrupted at some point and the only restore point they had was from a month and a half ago.


The site has been moved to a new host with redundant backup. Once I have some time, and finish moving my other websites, I will post more information here.

Recipe Talk / Oreo Stuffed Chocolate Chip

I just realized this recipe wasn't on the site anywhere, so I'm going to include it so I have a link for the cards.

Credit for this goes to Punzie and LexiconGrrl.

Adapating from lexi's bacon wrapped stuffed oreos and a few other variations. Punzie if this needs corrections let me know!

Oreo Stuffed Chocolate Chip Cookies


8 oz unsalted butter (room temp)
3/4 cup packed light brown sugar
1 cup sugar
2 large eggs
1 Tbsp vanilla extract
3 1/2 cups all-purpose flour
1 tsp kosher salt
1 tsp baking soda
10-12 oz bag semi-sweet chocolate chips
1 pkg Double Stuf Oreo Cookies



Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
Add butter and sugars to the bowl, beat until fluffy then add the eggs and vanilla and beat until combined.
In a large bowl, combine the flour, salt, and baking soda with a wire whisk. Slowly add the dry ingredients to the mix until combined then add the chocolate chips.
Use an ice cream scoop to place a scoop of cookie dough on top of an Oreo. Place another scoop on the bottom of the Oreo. Seal the edges by pressing and cupping the dough in hand until the Oreo is completely enclosed. Shape into a thick patty. Repeat with remaining cookies and dough.
Place the stuffed cookies on the prepared baking sheet a couple of inches apart and bake for 11-15 minutes, until the cookies are cooked through.
Let cool for 5 minutes and transfer to a cooling rack

Our host has notified me that they will have an extended maintenance window coming up Saturday. They are moving several servers to a new data center so during the time above there may be periods where the website will be unavailable.


Downtime should not extend for the entire period.

I'm looking for your recipes and pictures to feature on the blog. We already get a good amount of site traffic to this section of the forums but I'd love to feature some of these amazing recipes in a more prominent manner.


What I need:
  • Recipe - Include full instructions step by step and ingredients
  • Photos - You don't need photos for each step but a couple nice shots of the final product would be marvelous. The pictures need to be clear, well lit and not blurry.
The more you can give me the better. People asking for cookie brigade recipes is pretty common and this way we can create a nice repository for future bakers to use.

Brigade News / Receiving Brigade Emails

I know some people had had some issues receiving Brigade emails, so I just want to clarify a few things.

You should ensure that your email is whitelisting any emails coming from @cookiebrigade.org, including [email protected] and [email protected].

Doing so will ensure you'll receive the emails and they won't go into your junk mail. If you continue to have issues please let me know.

For all newsletters and event mailings we use MailChimp. This allows us to easily comply with the CAN-SPAM act and allows you to opt out. These emails are critical for event planning/organizing, we will keep the number of emails to a minimum and promise to never share your address.


These lists are populated through the member list here on the site. If you opt out of these emails you will NOT receive organizing information in email from us, one opt out will remove you from all future mailings using mail chimp!

Recipe Talk / Old Fashioned Sugar Cookies

This is an old fashion recipe for rolled sugar cookies. The cookies come out soft but sturdy and are great for decorating. This recipe does call for lard, you can source that at most grocery stores, just look for pasturized lard (not shortening!).

Ingredients
1 cup sugar
1/2 cup lard
1/4 cup butter
2 eggs, slightly beaten, just break the yokes
1 tsp vanilla
2 1/2 cups flour
1 tsp baking powder
1/2 tsp salt

Making the Dough
  • Cream your butter, lard and sugar together in a mixer.
  • Once the butter, lard and sugar are fully combined add in your eggs and vanilla.
  • Once the egg have been incorporated begin adding the flour in 1/2 cup increments.
  • Add in the salt and baking powder.
  • Transfer the dough to plastic wrap and cover/wrap entirely and chill for a minimum of 6-8 hours, preferably overnight.
The Cookies
  • Preheat the oven for 375 degrees.
  • Once your dough is completely chilled, its going to be fairly stiff, roll it out on a floured surface to about 1/4 to 1/6". For rolling its helpful to put some flour on top of the dough as well and on your rolling pin.
  • Cut cookies into desired shapes and place them on an ungreased pan. I recommend using parchment paper or a silpat if you have it. You can repeat this process until all dough is gone, recombining the bits left over to re-roll the dough.
  • Bake at 375 for 5-7 minutes, the time will depend on your oven, I recommend monitoring the first batch.
